Description
These banana cottage cheese pancakes are soft, fluffy, and packed with protein. Made without flour or sugar, they’re naturally gluten-free, kid-friendly, and easy to whip up in a blender for a wholesome breakfast in minutes.
Ingredients
1 cup cottage cheese
1 medium ripe banana
1 large egg
1 teaspoon vanilla extract
2 teaspoons baking powder
½ teaspoon cinnamon
1 cup old fashioned oats
Instructions
1. Add all ingredients to a blender: cottage cheese, ripe banana, egg, vanilla, baking powder, cinnamon, and oats.
2. Blend until smooth and creamy, about 30–45 seconds.
3. Let the batter rest for 5 minutes so the oats can absorb moisture.
4. Heat a nonstick skillet over medium heat and lightly coat with butter or oil.
5. Pour ¼ cup of batter per pancake onto the skillet.
6. Cook for 2–3 minutes on one side until bubbles form.
7. Flip and cook for another 1–2 minutes until golden and fluffy.
8. Repeat with remaining batter.
9. Serve warm with toppings like almond butter, maple syrup, or fresh fruit.
Notes
Letting the batter rest helps the oats absorb liquid and results in fluffier pancakes.
