Description

This cottage cheese and spinach crustless quiche is a creamy, high-protein, low-carb recipe that’s perfect for breakfast, meal prep, or a quick, healthy dinner.


Ingredients

1 tbsp oil

1 small onion, diced

1⁄2 bell pepper, diced

2 cups fresh baby spinach, chopped

1 1⁄2 cups cottage cheese

4 large eggs

1 cup shredded cheddar cheese (or half cheddar, half mozzarella)

1⁄2 cup milk

1⁄2 tsp garlic powder

1 tsp Italian seasoning

Salt and pepper to taste


Instructions

1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish.

2. Heat oil in a pan, sauté onion and bell pepper for 3-4 minutes. Add spinach, cook until wilted.

3. In a large bowl, whisk eggs. Stir in cottage cheese, shredded cheese, milk, garlic powder, Italian seasoning, salt, and pepper.

4. Add cooked veggies to egg mixture. Stir to combine.

5. Pour mixture into prepared dish. Bake for 35-40 minutes or until set and golden on top.

6. Cool for 5-10 minutes before slicing and serving.

Notes

For a lower-calorie option, use reduced-fat cottage cheese and milk.

Frozen spinach works too, just thaw and squeeze dry before adding.

Great for meal prep — stores well in the fridge for up to 4 days.
