Description
These moist and protein-packed cottage cheese banana muffins are perfect for a healthy breakfast or snack. Easy to prep in the blender and ready in just 20 minutes!
Ingredients
1 cup cottage cheese
2 ripe bananas
2 large eggs
¼ cup honey
1 ½ teaspoons vanilla
1 Tsp baking powder
1 teaspoon cinnamon
2 cups old-fashioned oats
Instructions
1. Preheat oven to 350°F (175°C) and line a muffin tin.
2. In a blender, combine cottage cheese, bananas, eggs, honey, and vanilla. Blend until smooth.
3. Add oats, baking powder, and cinnamon. Blend until creamy.
4. Pour batter into muffin tin, filling each about ¾ full.
5. Bake for 18–20 minutes until golden and firm to touch.
6. Cool for 10 minutes and enjoy!
Notes
Store in an airtight container for up to 4 days or freeze for longer storage.
Great with added chocolate chips, coconut, or peanut butter.
