These cottage cheese brownies are a fudgy, high-protein dessert made with simple ingredients like almond flour, cocoa powder, and blended cottage cheese. A gluten-free, healthy chocolate treat that’s easy to bake and even easier to love.
Ingredients
2/3 cup cottage cheese (blended until smooth)
2 large eggs (room temperature)
1 teaspoon vanilla extract
1/4 cup maple syrup
1/4 cup granulated sugar (optional)
1/2 cup almond flour
1/4 cup unsweetened cocoa powder
1/4 teaspoon baking soda
1/3 cup chocolate chips (plus extra for topping)
Instructions
1. Preheat your oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
2. In a blender or food processor, blend the cottage cheese until completely smooth. This ensures the final brownies are silky and free of curds.
3. In a bowl, whisk in each egg one at a time with the vanilla extract, maple syrup, and blended cottage cheese for a smooth and creamy base.
4. Add almond flour, cocoa powder, baking soda, and sugar (if using), then combine everything until the batter is smooth and fully incorporated.
5. Fold in chocolate chips.
6. Pour the batter into the prepared pan and smooth the top.
7. Sprinkle extra chocolate chips on top if desired.
8. Bake for 22–25 minutes or until the center is set and a toothpick comes out with a few moist crumbs.
9. Cool completely before slicing into squares.
10. Store in an airtight container in the fridge for up to 5 days.
Notes
For extra chocolate depth, add 1/2 teaspoon espresso powder.
These brownies are naturally gluten-free and protein-rich without using protein powder.
They freeze well. Wrap individual slices in parchment and store in a freezer-safe container for up to 2 months.

If you don’t have a 1/4 cup measure, use 4 tablespoons of cocoa powder instead it’s the same amount and just as easy.
You can also swap almond flour for finely ground coconut flour, but reduce the amount slightly as coconut flour is more absorbent.
