This creamy cottage cheese Caesar dressing salad is protein-packed, low in calories, and full of flavor. A healthier twist on the classic Caesar, perfect for meal prep or quick lunches.
Ingredients
For The Salad
4 oz cooked, seasoned chicken (133 g) ~3/4 cup
2 cups romaine lettuce (94 g) chopped
1/2 oz parmesan cheese (14 g) ~3 tbsp fresh grated
1/4 cup cottage cheese Caesar dressing (56 g)
1/2 cup homemade croutons (15 g)
Cottage Cheese Caesar Dressing
1 cup 2% low fat cottage cheese (226 g)
1 oz parmesan cheese (28 g) ~1/3 cup fresh grated
1 large clove garlic or 2 smaller ones
1 tbsp lemon juice (15 g)
1/2 tbsp Worcestershire sauce
1/2 tbsp dijon mustard
1/4 cup milk plus more to thin
1/4 tsp ea: salt and pepper
Croutons
3 slices white bread (70 g)
light spray avocado oil (2 g) or olive oil
Italian seasoning, garlic powder, salt and pepper to taste
Instructions
1. Preheat oven to 375°F. Cut or tear bread into chunks, spray with oil, season, and bake 6–8 minutes until golden.
2. Add cottage cheese, parmesan, garlic, lemon juice, Worcestershire, Dijon, milk, salt, and pepper to a blender.
3. Blend until smooth. Add more milk to reach desired consistency.
4. Taste and adjust seasoning if needed.
5. Assemble salad: combine lettuce, chicken, dressing, parmesan, and croutons. Toss and serve.
Notes
Use freshly grated parmesan for best flavor and texture.
Store dressing in the fridge for up to 5 days.
Great as a dip or sandwich spread too!
