Description

Ingredients

2 chicken breasts, about 1 ½lbs

Salt & pepper, for seasoning the chicken

2 tablespoons olive oil, divided

½ cup milk

1 ½ cups low-fat cottage cheese

⅓ cup parmesan cheese

¼ teaspoon salt

⅛ teaspoon pepper

2 teaspoons cornstarch

½ large onion, chopped

2 teaspoons Italian seasoning

3 cloves garlic, minced

Seasoned panko bread crumbs (optional)


Instructions

1. Season the chicken with salt and pepper, then sear in 1 tablespoon olive oil over medium heat for 3-4 minutes per side.

2. In a blender, mix cottage cheese, milk, parmesan, cornstarch, ¼ teaspoon salt, and ⅛ teaspoon pepper until smooth.

3. In the same skillet, sauté onion for 2-3 minutes. Add garlic and Italian seasoning, cook 1 minute more.

4. Preheat oven to 375°F. Place chicken in a baking dish, pour sauce over, and top with panko if desired.

5. Bake for 20-25 minutes, until chicken reaches 165°F. Broil 2-3 minutes for a crispy top if using panko.

6. Let rest for a few minutes, then serve and enjoy!

Notes

Optional: Add spinach or mushrooms for extra veggies.

Swap parmesan for shredded mozzarella or cheddar if preferred.

Full-fat cottage cheese works for an even creamier sauce.
