Cottage Cheese Fudge Recipe

Description

This cottage cheese fudge recipe is creamy, chocolatey, and packed with protein. No baking required! Perfect for a low-sugar, high-protein dessert or healthy snack.


Ingredients

2ΒΌ cups (500 g) Cottage cheese

β…“ cup (33 g) Cocoa powder (optional)

8.8 oz (250 g) Dark chocolate (high quality)

2 tablespoons (30 ml) Coconut oil (optional)


Instructions

1. Blend cottage cheese in a high-speed blender until completely smooth.

2. Melt dark chocolate and coconut oil together in a microwave-safe bowl or over a double boiler.

3. Whisk in cocoa powder to the melted chocolate if using.

4. Pour melted chocolate into blended cottage cheese and blend again until fully combined and silky.

5. Line an 8-inch square pan with parchment paper and pour in the fudge mixture. Smooth the top.

6. Chill in the refrigerator for at least 2 hours until firm.

7. Lift fudge from the pan, cut into squares, and enjoy!

Notes

Store in the fridge for up to 7 days or freeze for up to 3 months.

For a sweeter version, blend in 1–2 tablespoons maple syrup or sweetener of choice.
