Description

Cottage cheese in mashed potatoes creates creamy, high-protein comfort food using simple ingredients. A lighter, more flavorful twist on a classic side dish.


Ingredients

7 medium-sized yellow potatoes

1 cup large curd cottage cheese

4 tbsp unsalted butter

4 tbsp half-and-half (divided)

¼ tsp salt

Pinch of ground black pepper


Instructions

1. Peel and chop the potatoes into chunks.

2. Boil potatoes in salted water until fork-tender, about 15–20 minutes.

3. Drain and return to the hot pot to release moisture.

4. Add butter, cottage cheese, and half the half-and-half.

5. Mash until creamy and smooth.

6. Stir in remaining half-and-half, salt, and pepper to taste.

7. Serve warm, topped with optional herbs or butter.

Notes

Use Yukon Gold or Russet potatoes for the creamiest results.

Large curd cottage cheese melts beautifully into the mash.

Add roasted garlic or herbs for extra flavor.
