Description

These cottage cheese muffins are soft, fluffy, and packed with protein. Made with simple, wholesome ingredients and ready in minutes, they’re perfect for breakfast, snacks, or meal prep.


Ingredients

3/4 cup cottage cheese (whole milk works best)

1/3 cup maple syrup

1 teaspoon vanilla extract

1/3 cup pumpkin puree (or 1/4 cup applesauce for chocolate chip version)

2 large eggs

1 1/2 cup all-purpose flour (or gluten-free flour)

1 1/2 teaspoons baking powder

2 teaspoons pumpkin spice (for pumpkin version)

1/4 teaspoon salt

1/2 cup mini chocolate chips (optional)


Instructions

1. Preheat oven to 350°F (175°C) and grease muffin tin.

2. Blend cottage cheese, maple syrup, vanilla, eggs, and pumpkin puree until smooth.

3. In a bowl, mix flour, baking powder, salt, and spices if using.

4. Pour wet mixture into dry ingredients and mix gently.

5. Fold in chocolate chips or desired mix-ins.

6. Divide batter into muffin cups.

7. Bake for 18–22 minutes until golden and a toothpick comes out clean.
