Description

A creamy, fluffy Cottage Cheese Omelette that’s high in protein, low in carbs, and ready in just 10 min. Perfect for a healthy breakfast or quick meal.


Ingredients

3 large eggs

⅓ cup cottage cheese (100g), divided

2 tablespoon parmesan, grated

⅛ teaspoon sea salt

¼ teaspoon black pepper

2 teaspoon olive oil

2 teaspoon chives, finely chopped


Instructions

1. Crack eggs into a bowl. Add 2 tablespoons cottage cheese, parmesan, salt, and pepper. Whisk until fluffy.

2. Heat olive oil in a non-stick frying pan over low heat. Pour in egg mixture.

3. Cook for 7-8 min, lifting edges to let uncooked egg run underneath.

4. Spoon remaining cottage cheese onto one half, fold omelette, cook 1 more min.

5. Slide onto plate, garnish with chives, and enjoy.

Notes

For extra flavor, sauté spinach, diced onion, or cherry tomatoes and add them to the omelette.

To make it even more filling, serve with Cottage Cheese Toast or Cottage Cheese Egg Muffins.
