Description
This cottage cheese peanut butter mousse is a rich, creamy, and naturally sweetened high-protein dessert you can make in just 5 minutes — no protein powder needed!
Ingredients
1 cup cottage cheese (full-fat for the creamiest texture)
¼ cup peanut butter (creamy, natural, no sugar added)
2 tbsp sweetener (honey, maple syrup, or a sugar-free option like allulose or Monk fruit)
1 tsp vanilla extract
¼ tsp salt (optional)
1–2 tbsp milk or heavy cream (optional, to thin)
Toppings: chopped peanuts, dark chocolate chips, or extra peanut butter drizzle
Instructions
1. Add cottage cheese, peanut butter, sweetener, vanilla extract, and salt to a blender or food processor.
2. Blend on high for 30–60 seconds until the mixture is smooth and fluffy. Add milk or cream if needed to thin.
3. Taste and adjust sweetness if desired. Optional: stir in cocoa powder or Greek yogurt for variation.
4. Spoon into cups or ramekins. Top with chopped peanuts, a peanut butter drizzle, or dark chocolate chips.
5. Serve immediately or chill for a firmer texture. Store in the fridge for up to 3 days.
Notes
Use full-fat cottage cheese for the best texture.
Keto version: use allulose or Monk fruit instead of honey or maple syrup.
Add 1 tbsp cocoa powder for a chocolate version.
